Blueberry Muffins

1/2 cup sugar
2 cups flour
1 tablespoon baking powder
1 egg, beaten
1 cup milk
1 1/2 sticks butter, melted and cooled
1 cup blueberries
1 tablespoon sugar mixed with 1 teaspoon grated lemon rind

  1. In a large mixing bowl stir together sugar, flour, and baking powder.
  2. Into center pour milk, egg, and butter and mix well.
  3. Add blueberries and spoon into 12 greased muffin tins.
  4. Top each muffin with sugar lemon rind mix. Bake at 425 for 25 minutes.
